Who Says You Can't Have PIZZA, BREAD, or BAGELS?

As you know, last week I started back on the Low Amylose diet and so far, so good. I've really been trying to find new things that are safe to eat that, namely some type of "bread" substitute.

Well, I finally found a company that makes bread out of tapioca starch, which is safe on the low amylose diet!



Against The Grain Gourmet makes bagels, rolls, baguettes, pizzas, and pizza shells that are all safe to eat on the Low Amylose diet. My local stores do not carry the rolls, so I can't say how they taste, but I did buy the baguettes, cinnamon bagels, and a pizza shell.



I bought the pizza shell instead of their pizzas because I am the only one in the house to eat them and I didn't want to waste a whole pizza for one meal. (I'm not a fan of reheating pizza.) So, I cut the pizza into eight slices and wrapped them in stacks of two slices for an easy grab-n-go meal. This also gives me a better handle on the toppings. Some days I may want a pepperoni, while others I may want veggies only. The sauce I use I got from the organic section at Publix, it's called L.E.Roselli's pizza sauce. As for the pizza shell, I didn't notice a difference on the bites with the toppings, but I didn't care to eat the crust by itself even though I am typically a crust kind of girl. Next time I make it, I'll just extend the toppings to the edge.

The baguettes and cinnamon bagels were pretty good, but again, I preferred the texture more than the flavor. The bagel was fine with plain cream cheese, and the baguettes were good with meat, cheese, and mustard or smothered in peanut butter.

The baguettes were about $8 for two baguettes, but that's six servings so it's not too bad. The bagels were also about $8 for six. The plain pizza shell was about $7 for eight slices, their pizzas topped were only about $8. I wish I could find the rolls locally.
